The simple idea
In coeliac disease, gluten in wheat, barley and rye triggers immune damage in genetically susceptible people. The damaged small bowel may not absorb iron, folate, calcium, vitamin D and other nutrients well. Some patients have diarrhoea and weight loss; others present with iron-deficiency anaemia, bloating, infertility, mouth ulcers or bone disease.
